Bobotie

A typical South African recipe, with culinary influence from the Netherlands and Indonesia. In other words, you are going to enjoy a totally multicultural dish at home.

Ingredients

  • 2 slices of white bread
  • 2 onions, chopped
  • 25 g butter
  • 2 cloves garlic, crushed
  • 1 kg lean ground beef
  • 2 tablespoons curry paste
  • 1 teaspoon dried mixed herbs
  • 3 cloves
  • 5 allspice berries
  • 2 tablespoons peach or mango chutney
  • 3 tablespoons raisins
  • 6 bay leaves

For the topping:

  • 300 ml whole milk
  • 2 large eggs

Preparation

  1. Preheat the oven to 180°C. Pour cold water over the bread and leave to soak.
  2. In your Dutch oven, sauté the onions in the butter, stirring regularly for 10 minutes until they are soft and begin to brown.
  3. Add the garlic and the beef, and stir well, breaking the meat into fine granules until it changes color. Add the curry, herbs, spices, chutney, raisins, and 2 bay leaves with 1 teaspoon of salt and plenty of ground black pepper.
  4. Cover and simmer for 10 minutes. Squeeze the water out of the bread and then mix it into the meat mixture until well combined.
  5. Press the mixture down well and smooth the top. You can prepare this and refrigerate it a day in advance.
  6. For the topping, beat the milk and eggs with seasoning, then pour them over the meat.
  7. Place the remaining bay leaves on top and bake for 35-40 minutes until the topping is set and starts to brown.
