Mini Pancakes Stuffed with Dulce de Leche
It's time to surprise your family with unique, miniature recipes! This time, our Cast Iron Provoletera will be the star of some delicious Arequipe-filled Mini Pancakes.
Ingredients
- 1 cup of flour (it can be a mix of oat flour and whole wheat flour, use whichever you have)
- 1 cup of milk (it can be plant-based or whichever you prefer)
- 2 eggs
- 1 tablespoon of baking powder
- Stevia to taste, or 1 tablespoon of sugar or panela
Preparation
- Add the baking powder to half of the milk, stir well, and let it rest for a few minutes.
- At the same time, mix the dry ingredients first and then incorporate the wet ones; you will get a very thick batter.
- Add the baking powder and milk mixture until it loosens up a bit and looks like traditional pancake batter (not too liquid or too thick).
- Let the batter rest for 30 minutes so the baking powder activates.
- Transfer the mixture to a squeeze bottle, a piping bag, or a ziplock bag where you can cut off a tip with scissors to create a homemade piping bag.
- Grease the Provoletera with a little butter or the oil you use, over medium heat, and fill the spaces halfway. Add a small dollop of Arequipe and then add a little more batter to cover the pancakes (you could also use chocolate, jam, or simply leave them plain).
- Flip them over and serve them warm with powdered sugar and fruit.
