Salmon in Orange and Caper Sauce in a Victoria Cast Iron Skillet
Our chef Anita shares an original way to prepare your seafood recipes. This time it's Salmon in orange and caper sauce.
A different way of cooking and living a Victoria experience
Ingredients
- Salmon fillets
- 1 tablespoon olive oil
- 40 grams butter
- 1 onion, chopped
- 1 tablespoon white wine vinegar
- 4 tablespoons capers
- 1 cup orange juice
- 1 tablespoon chopped parsley
- Orange zest
- 2 tablespoons orange marmalade
Preparation
- Place the salmon with a little oil in our cast iron skillet to sear the fillet a bit on the skin side.
- Turn the fillets for a very short time on the other side just for presentation. The idea is for it not to be overcooked so it doesn't dry out.
- For the sauce, sauté our finely chopped onion in butter and oil until the onion caramelizes.
- Add a little garlic, the white wine vinegar, the orange marmalade, and orange juice. Let the orange juice reduce by half. Then add the capers, chopped parsley, and a bit of the orange zest.
- Serve the salmon with the sauce and garnish with some orange zest. Hello
