Traditional onion soup
A very French recipe that we all love. It is very simple and easy to prepare at home with ingredients that you surely have on hand.
Ingredients
- For the vegetable stock
- 1 carrot, mirepoix cut
- 1 celery stalk, mirepoix cut
- 1 white onion, mirepoix cut
- 4 liters of water
- For the bouquet garni:
- Parsley leaves
- Bay leaf
- Celery leaf
- Thyme sprigs
- A sheet of the white part of the leek
- For the onion soup:
- 2 tablespoons butter
- 4 onions, thinly sliced
- 2 tablespoons sugar
- Vegetable stock (previous recipe)
- 8 slices of artisanal bread
- 100 grams grated Gruyere cheese
- Salt and pepper to taste
- For the beurre manié:
- 1 teaspoon softened butter
- 1 teaspoon wheat flour
Preparation
- For the bouquet garni, place the aromatic herbs inside the leek leaf and tie with kitchen twine or string to create a bundle.
- For the stock, place the chopped vegetables and the bouquet garni in a hot Dutch oven.
- Cook for 1 minute over high heat, stirring constantly.
- Add the water and let it simmer, covered, for 40 minutes. Remove the vegetables and set the liquid (stock) aside.
- For the beurre manié, mix the butter and flour in a bowl and form into a smooth small ball. Keep refrigerated.
- For the onion soup, place the butter and onions in a hot Dutch oven, lower the heat, and add the sugar.
- Stir constantly and cook until caramelized.
- Add the stock and the beurre manié to thicken. Adjust seasoning with salt, pepper, and sugar.
- Place the slices of bread topped with grated cheese in a preheated oven and bake until toasted and the cheese is melted and golden.
- Serve the soup hot with a slice of bread and cheese on top.
