Dutch Oven Curry
Curry Ingredients
- 1.5 cups diced eggplant
- Kale leaves
- 1.5 cups diced sweet potato or potato
- 1/3 cup cashews
- 1.5 cups chopped tomato
- Chopped chives
- 1.5 cups of another chopped vegetable, optional, jicama or another tuber
- 1 medium onion, diced
- 1.5 cups chopped cauliflower
- 1 cup coconut milk or coconut yogurt
- 2 tablespoons coconut oil
- 1.5 cups pumpkin
- 2 cloves garlic
- A bit of ginger
- 2 tablespoons curry powder
- 1/2 tablespoon ground cinnamon and coriander seeds
- Optional: a teaspoon of black pepper and/or cayenne pepper
- Sea salt to taste
Preparation
- Preheat the oven to 200 degrees C.
- Add all the vegetables to the Dutch oven with the coconut milk and oil.
- Separately, crush the spices, ginger, and garlic in a mortar. Incorporate them into the vegetables with a wooden spoon.
- Cover with the lid and place in the oven at 200 degrees C for approximately one hour. Check every 20 minutes and stir a little.
- Once out of the oven, add the kale leaves, cashews, and chopped chives 😋 This curry is served hot and delicious over the rice of your choice and is also a perfect accompaniment to any protein you like!
