Salmon with Green Peppercorn Butter (6 servings)

INGREDIENTS

For the green peppercorn butter
- 1 cup butter at room temperature
- 1 tablespoon green peppercorns, in brine and crushed
- 2 teaspoons roasted garlic
- 1 tablespoon finely chopped capers
- ¼ cup finely chopped red bell pepper
- 1 tablespoon fennel powder
- 1 tablespoon finely chopped flat-leaf parsley
- ¼ teaspoon salt

For the salmon
- 6 salmon fillets, 150 grams each, skinless.

Green peppercorn butter. Reserved.
- Salt and pepper to taste

PREPARATION
For the green peppercorn butter
In a bowl, add the butter, peppercorns, capers, garlic, bell pepper, fennel, parsley, and salt, and with the help of a spoon, mix everything until well combined. Divide this mixture into two equal parts; reserve one part for searing the salmon, and serve the salmon with the other half.
For the salmon
Using a paper towel, pat each salmon fillet dry. Then, apply the reserved green peppercorn butter to each side and, in a non-stick pan over high heat, sear the salmon for 2 to 3 minutes per side, or until the desired doneness is reached. Then, season with salt and pepper to taste.
To serve
Serve the salmon with the butter cut into equal-sized slices.
