WHY DO WE USE FLAXSEED OIL FOR SEASONING?
We have tested over a dozen different oils and fats to determine which offers the best performance right from the start. Flaxseed oil, when used correctly, has always proven to be the best oil for base coats. This is due to several factors:
1. Polymerization: Flaxseed oil is a drying oil, which means it polymerizes more easily than non-drying oils, such as grapeseed oil, another oil commonly used for seasoning. This property allows it to form a durable, hard, and non-stick seasoning layer on cast iron.
2. Smoke Point: Flaxseed oil has a lower smoke point (around 225°F or 107°C). Although this can be a disadvantage for cooking, it is actually beneficial for the seasoning process. The lower smoke point allows the oil to polymerize at lower temperatures, creating a strong bond with the cast iron surface.
3. Fat Composition: Flaxseed oil has a high content of alpha-linolenic acid (ALA), an omega-3 fatty acid, which is relatively stable compared to the polyunsaturated fats found in grapeseed oil and other popular seasoning oils. This stability can result in a longer-lasting and more resistant seasoning on your cast iron cookware.
4. Food Safety: Flaxseed oil, when properly polymerized, forms a stable and safe surface for cooking. The polymerized layer reduces the risk of oxidation and the formation of harmful free radicals during cooking, ensuring a healthier culinary experience.


Our pre-seasoned cast iron has been seasoned at high temperatures and is ready for cooking. Here are our recommendations:
- Hand wash and dry completely before first use.
- It is normal for food to stick to the surface of cast iron cookware during the first few uses. To prevent this, we recommend using a small amount of cooking oil or fat until the seasoning has built up and become resistant. You can use any edible fat, such as vegetable oil, nut oil, lard, or butter.
- When cooking with cast iron, it is important to use the proper heat to prevent sticking. Cast iron retains heat very well, so we recommend using low or medium-low heat for most foods. Delicate foods, such as proteins, cook best over low heat.
- To protect the seasoning, we also recommend avoiding acidic foods like tomatoes, vinegar, and citrus until the seasoning has had time to build up.
- If you want to give your cast iron cookware an extra layer of seasoning, some people choose to season it one or more times before use. This is not necessary if you take good care of your cookware, but it can help create a thicker layer of seasoning more quickly. Ultimately, the decision is yours.

Although it can be exciting to start using your new cookware,
it is important to avoid common mistakes that could damage the seasoning and cause problems when cooking.
To avoid these mistakes, we recommend:
- If you make a mistake and rust forms or food particles stick to the pan, don't worry: your cast iron cookware is durable and can be restored with proper care and maintenance. - Remember that, as long as your cast iron cookware is not broken, it can be recovered and restored to its original state.
- With proper care and attention, your cast iron cookware will provide you with many decades of reliable use.

If your cast iron cookware has rusted, it is important to take steps to remove the rust and re-season it in order to restore it to its original condition.
To do this, you can consult the care and maintenance instructions included in the packaging or on this website.

According to our laboratory tests, the best oil for creating a strong, durable seasoning layer is flaxseed oil. For this reason, we use 100% flaxseed oil to season our pans before they reach your home.
However, 100% flaxseed oil is not the most suitable for daily maintenance, as too many layers of this oil can cause the surface to flake off.
For daily maintenance, you can use filtered coconut oil, vegetable oil (rapeseed, canola, corn, etc.), Crisco, or other edible fats.
Be sure to wipe off any excess oil with a natural cotton cloth or towel (do not use polyester or other synthetics, as they could melt and stick to the pan).
Keep in mind that some oils will smoke more as the temperature rises. Always research the smoke points of the oils you wish to use for seasoning and prepare your kitchen with good ventilation.

Our cast iron pieces and handles are proudly manufactured in Medellín, Colombia, in the same neighborhood where our story began some 80 years ago, when 16-year-old Raúl Mejía decided to buy a small foundry. We cast all our iron in our own facilities.
Our flaxseed oil is produced in Europe.

We only use non-GMO, kosher-certified flaxseed oil.

Victoria warrants that its authentic cookware will be free from manufacturing defects for a lifetime from the date of purchase. The warranty does not cover damage due to misuse (including improper heating, use, modifications, or cleaning, as well as rust) or commercial use.
This warranty does not cover stains, discoloration, rust, scratches, or other signs of wear (such as wear, neglect, or improper seasoning). If, upon inspection, Victoria determines that a product has a manufacturing defect, Victoria will repair or replace the product, at its discretion, at no cost to the customer.
This warranty is limited to the original consumer with proof of purchase and is non-transferable. If the product was not purchased new from an authorized dealer, supplier, or manufacturer representative, this warranty shall be void. Any warranty replacement will be shipped only to the country of purchase.
