Rice Pudding with White Chocolate
A different recipe for this Christmas, a White Chocolate Rice Pudding prepared with our Cast Iron cookware.
WARNING: you will want seconds!
Ingredients
- 500 ml whole milk
- 80 ml heavy cream
- 30 ml evaporated milk
- 60 ml condensed milk
- 250 g red berries
- 3 sprigs of spearmint
- 3 sprigs of mint
- 500 ml water
- 300 g rice
- 120 g white chocolate
- Anise, cloves, cinnamon
- 40 g sugar
Preparation

Cook the rice in our Victoria Cast Iron Dutch Oven with the water. Once the water has evaporated, cover, turn the heat to the lowest setting, and let the steam finish cooking it; set aside.

Place the condensed milk, evaporated milk, whole milk, cloves, cinnamon, anise, and white chocolate in a Cast Iron skillet. Heat for 8 minutes (At this point, you can make any variations you like, such as adding dark chocolate, cocoa powder, oats, coconut, whatever you want). Once dissolved or infused, add this mixture to the cooked rice and stir well until homogeneous.

Cut the fruit into small pieces, add the sugar and spearmint, and let it infuse in the refrigerator until it releases its own juice. Set aside for serving.
- Remove from the pot and serve; garnish with red berry sauce or chopped nuts.
