Bobotie
A typical South African recipe, with culinary influence from the Netherlands and Indonesia. In other words, you are going to enjoy a totally multicultural dish at home.
Ingredients
- 2 slices of white bread
- 2 onions, chopped
- 25 g butter
- 2 cloves garlic, crushed
- 1 kg lean ground beef
- 2 tablespoons curry paste
- 1 teaspoon dried mixed herbs
- 3 cloves
- 5 allspice berries
- 2 tablespoons peach or mango chutney
- 3 tablespoons raisins
- 6 bay leaves
For the topping:
- 300 ml whole milk
- 2 large eggs
Preparation
- Preheat the oven to 180°C. Pour cold water over the bread and leave to soak.
- In your Dutch oven, sauté the onions in the butter, stirring regularly for 10 minutes until they are soft and begin to brown.
- Add the garlic and the beef, and stir well, breaking the meat into fine granules until it changes color. Add the curry, herbs, spices, chutney, raisins, and 2 bay leaves with 1 teaspoon of salt and plenty of ground black pepper.
- Cover and simmer for 10 minutes. Squeeze the water out of the bread and then mix it into the meat mixture until well combined.
- Press the mixture down well and smooth the top. You can prepare this and refrigerate it a day in advance.
- For the topping, beat the milk and eggs with seasoning, then pour them over the meat.
- Place the remaining bay leaves on top and bake for 35-40 minutes until the topping is set and starts to brown.
