Skillet cookie topped with blueberry cream and yogurt
Ingredients:
- 1 banana
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 1 cup oat flour
- 1/2 teaspoon baking powder
- 1 pinch of salt
- Semi-sweet chocolate chips
For the cream:
- 3 tablespoons plain Greek yogurt
- 1/2 cup blueberries
Preparation:
- Let's start by mashing the banana in a bowl with the help of a fork. Let's add the peanut butter and honey, mixing everything until homogeneous.
- We incorporate the dry ingredients: the oat flour, the baking powder, and a pinch of salt. We continue mixing until obtaining a uniform dough.
- It's time to add an irresistible touch. We add the semi-sweet chocolate chips and mix once more, ensuring they are distributed evenly.
- We heat a skillet over medium heat and grease it lightly.
- We take portions of the dough and place them in the preheated skillet. We press down gently to shape them into cookies.
- We cook the cookies in the skillet for about 15 minutes, flipping them occasionally to ensure they are golden brown on both sides. Meanwhile, let's prepare the blueberry cream!
- In a blender, we combine the Greek yogurt and the blueberries. We process until we obtain a thick and smooth mixture, which will be the delicious cream that will crown our cookies.
- With culinary elegance, we drizzle the cookies with generous spoonfuls of the blueberry and yogurt cream. The freshness of the blueberries will contrast perfectly with the sweetness of the cookies and the creamy touch of the yogurt.
