Peach Dessert with Ice Cream

An ideal dessert for this Christmas season, when love, togetherness, and sharing with our loved ones is paramount, this is a delicious Peach dessert with Ice Cream prepared in our Combo Cooker and served in our Cast Iron Mini Casseroles

Ingredients

For the dough

  • 300 g whole almonds or almond flour
  • 140 g butter, cubed
  • 1 pinch almond or vanilla extract
  • 250 g white sugar
  • 2 eggs
  • 150 g wheat flour

Filling

  • 4 tablespoons cornstarch
  • 1 can of peaches in syrup (approx. 450 g)
  • 120 grams white sugar
  • 1 pinch cinnamon
Peach dessert with ice cream

Preparation

  1. Grease the surface of the pot with butter.
  2. For the filling, cut the peaches into half-moons, add the sugar and cinnamon, and dissolve the cornstarch in the syrup from the peach can. Mix everything and set aside.
  3. Separately, for the dough, mix the sugar and butter by hand until a paste forms. Then add the extract and the wheat flour (mixed with almond flour or processed almonds if using whole almonds). Continue mixing and add the eggs one by one.
  4. To assemble: first, place the reserved peach mixture over the entire surface of the pot and gently cover it with the dough. Place the pot directly over low heat and cover with the lid. Let it cook over direct heat for 8 to 10 minutes to generate heat from the top of the Dutch oven as well. Bake for 45 minutes to an hour, being careful not to get burned and not uncovering the pot to prevent heat loss.
  5. Finally, serve and accompany with a scoop of vanilla ice cream. This dessert can be eaten hot or cold.
