Roasted Garlic and Herb Butter Lobster
A delicious way to prepare lobster on our Cast Iron Griddle. In addition to learning a bit about their weight, size, and the cut you should make to get a perfect dish! Ideal for a family weekend!
Ingredients
For cooking the lobsters
- 4 lobsters
- 1 cup of water
- 1 cup of white wine
- Bay leaf
- Thyme
- Parsley
- Salt
- Pepper
For the butter
- 125 ml of white wine
- 1 tablespoon of chives
- Lemon zest
- 1 teaspoon of Dijon mustard
- Hot sauce or chili to taste
- 1 1/2 tablespoons of parsley
- 1 teaspoon of tarragon
- 125 g of butter
- 1 head of garlic
- Paprika
- Salt
- Pepper
Preparation
- Butterfly the lobsters (cut through the hard part of the shell down to the tail and open). Season them with salt and pepper.
- Pre-steam for 3 to 5 minutes with water, white wine, parsley, bay leaf, thyme, and a little salt.
- Separately, roast the head of garlic with a little olive oil wrapped in aluminum foil. Use a knife to cut off the top of the garlic to make it easy to extract the garlic paste.
- Melt the butter in a pan, add the garlic paste, and sauté without letting it burn or change color.
- Add the butter, salt, and a little paprika.
- Add 125g of white wine, a few drops of hot sauce/chili, and half a teaspoon of Dijon mustard, and stir until reduced.
- Heat up our Victoria Griddle.
- Once the butter is ready, add lemon zest, chives, parsley, and tarragon. Stir and remove from heat.
- Add a little olive oil to our Griddle and place the lobsters on it for 5 to 7 minutes. Flip them over and add the butter.
- Leave on the heat for another 3 to 5 minutes.
