Malva Pudding
A delicious South African pudding that will help you surprise everyone at home on a special occasion or to break the routine and enjoy a different dessert.
Ingredients
Pudding
- 1 tablespoon butter at room temperature
- 1 cup brown sugar
- 4 tablespoons apricot jam
- 1 large egg
- 1 cup milk
- 2 tablespoons vinegar
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Sauce
- 2 tablespoons butter
- 125 ml cream
- 4 tablespoons brown sugar
- 2 tablespoons water
Preparation
Pudding
- Preheat the oven to 180°C
- In a large mixing bowl, add the first 4 ingredients: butter, sugar, jam, and egg. Beat until it lightens and becomes a bit fluffier.
- In a large measuring cup or bowl, add the milk, then the vinegar and vanilla extract. Whisk lightly.
- In another cup, add the baking soda to the flour and stir it quickly.
- Alternating between the milk mixture and the flour, add to the large bowl with the first mixture and stir well as you go.
- Pour the mixture into a lightly greased cast-iron skillet.
- Bake for 45 minutes, or until a knife comes out with fluffy crumbs attached (it is unlikely to come out clean) instead of raw batter.
- The pudding will stay in its mold and rest a bit once the sauce is poured over it.
Sauce
- Add all the sauce ingredients together in a pot and bring to a boil.
- Let it simmer, stirring constantly, for 3 minutes. This time will give the sauce a richer, deeper flavor.
- Prick the pudding several times with a fork to help the sauce absorb and not just pool on the sides and soak only there.
- Then pour the sauce slowly, making sure not to leave any part dry.
