Versatility designed for sophisticated cooking.

The 30 cm Signature Classic skillet offers the perfect balance between capacity and control. Designed for culinary enthusiasts who value technique and craftsmanship, it becomes a versatile companion for the most elaborate recipes.

Its construction in Spherrous™ cast iron ensures extreme durability and superior cooking performance. For added convenience and safety, it includes a removable leather handle cover, which allows for safe handling even when cooking at high temperatures. The clean, minimalist design reinforces its functional character, clearly distinguishing it from more ornamental collections.

Ideal for: medium cuts of meat, stir-fries, family meals, and dishes for sharing.

Indestructible material: our Spherrous™ iron (registered trademark) is different from that of any other pan. It will not crack or break.

High-level technology: thanks to eighty years of experience and constant testing, we have achieved the best smooth-texture finish so that food releases easily and the seasoning (curado) adheres optimally.

Made in-house: we produce everything in our factory in Colombia. 100% in-house production ensures consistent quality products every time.

Coolness you can feel: the "Y"-shaped handle stays cooler on the stovetop. Its raised design ensures stability and balance.

Solid weight, no dead weight: the weight is concentrated where it is needed, resulting in it being lighter where it is not.

Timeless craftsmanship: three generations of experience blend with modernity to create products that last a lifetime. Foundry work has run in our blood since 1939.

Dimensions: 12 in

Made entirely in Colombia.

Periodic Treatment (Seasoning)
To treat cast iron utensils, it is necessary to apply a layer of oil or fat and heat them, preferably in the oven for 15 minutes or on the stove until a light smoke is visible. This process protects the iron, prevents rust, and keeps the utensil in optimal condition. It is important not to scrub the bottom with too much pressure to avoid removing this layer of oil (patina).

When Washing
To wash your cast iron utensils, there are several correct and effective methods to ensure they remain in good condition. You can use mild soaps to remove excess food from the surface and use steel wool if necessary; you can also rub with a little coarse salt to get the friction needed for cleaning. After washing, it is essential to thoroughly dry the entire surface of the utensil with a dry cloth and apply a layer of oil or fat.

Important Notes
Keep in mind that pre-treated (seasoned) cast iron is not suitable for dishwasher use. Conversely, enameled cast iron is completely dishwasher safe; however, this process will significantly eliminate the patina that forms from oils and fats during cooking, which allows for greater natural and healthy non-stick properties for every dish.

FREQUENTLY ASKED QUESTIONS

We have tested more than a dozen different oils and fats to determine which offers the best performance right from the start. Flaxseed oil, when used correctly, has consistently proven to be the best oil for base layers. This is due to several factors:

  1. Polymerization: Flaxseed oil is a drying oil, meaning it polymerizes more easily than non-drying oils, such as grapeseed oil, another commonly used oil for seasoning pans. This property allows it to form a durable, hard, and non-stick seasoning layer on cast iron.
  2. Smoke point: Flaxseed oil has a lower smoke point (around 225°F or 107°C). While this may be a disadvantage when cooking, it is actually beneficial for the seasoning process. The lower smoke point allows the oil to polymerize at lower temperatures, creating a strong bond with the cast iron surface.
  3. Fat composition: Flaxseed oil is high in alpha-linolenic acid (ALA), an omega-3 fatty acid that is relatively stable compared to the polyunsaturated fats found in grapeseed oil and other popular seasoning oils. This stability can result in a longer-lasting, more resilient seasoning on your cast iron cookware.
  4. Food safety: Flaxseed oil, when properly polymerized, forms a stable and safe surface for cooking. The polymerized layer reduces the risk of oxidation and the formation of harmful free radicals during cooking, ensuring a healthier culinary experience.

Our seasoned cast iron has been cured at high temperatures and is ready for cooking. Here is what we recommend:

- Hand wash and dry thoroughly before first use.
- It is normal for food to stick to the surface of cast iron cookware during the first few uses. To prevent this, we recommend using a small amount of cooking oil or fat until the seasoning has solidified. Any edible fat can be used, such as vegetable oil, nut oil, lard, or butter.
- When cooking with cast iron, it is important to use the proper heat to prevent sticking. Cast iron retains heat very well, so we recommend using low or medium-low heat for most foods. Delicate foods, such as proteins, cook best over low heat.
- To protect the seasoning, we also recommend avoiding acidic foods like tomatoes, vinegar, and citrus until the seasoning has had time to form.
- If you want to give your cast iron cookware an extra layer of seasoning, some people choose to season it one or more times before use. This is not necessary if you take good care of your cookware, but it can help create a thicker layer of seasoning more quickly. Ultimately, the choice is up to you.

Although it can be exciting to start using your new cookware, it is important to avoid common mistakes that can damage the seasoning and cause problems when cooking.

To avoid these mistakes, we recommend the following:

- If you make a mistake and rust forms or food particles stick to the pan, don't worry: your cast iron cookware is durable and can be restored with proper care and maintenance. For more information on how to re-season your cookware, you can consult the instructions included in the packaging or on this website.
- Remember that, as long as your cast iron cookware is not cracked, it can be recovered and restored to its original state.
- With proper care and attention, your cast iron cookware will provide you with many decades of reliable use.

We are working on it and will launch it soon. In the meantime, tell us what you prefer: glass or iron?
